Baked Pineapple Ginger Chicken

I made this for dinner last night, but didn't get around to posting it then. Also, the pictures that I did take somehow got corrupted on my memory card and in order to fix it, Husband had to wipe the whole thing clean. My apologies.

I was really excited about this recipe. And I don't know if I was just having a bad night or what, but it turned out to be kind of a pain. It's not that any of the steps were very difficult, but dunking the chicken pieces into the egg, then breading, then putting them on the cookie sheet took FOREVER. And my sauce never thickened up. The cornstarch just stayed in little clumps. So annoying. The flavor of the overall dish wasn't bad, however I was hoping for a lot more. Something seemed off to me and I couldn't figure out what it was. I want to say there was too much paprika in the breading, but it was hard to tell. And speaking of the breading, it never really got crispy. Sadly, I have to call this one a fail. 2 stars.

Parmesan Baked Potato Halves


I wanted to do something simple this week because things have still felt a bit crazy. I don't think my love of potatoes and cheese is a secret. If this is news to anybody, let me start over. Hi, I'm Lindsay. I love potatoes. And cheese. And pasta. Basically carbs. Anyway, I had all the ingredients for these on hand so they were the lucky winners!

The recipe doesn't list actual measurements outside of how many potatoes to use, so I felt confident in just using two instead of six.
The hardest part of this recipe might have been slicing the potatoes lengthwise. My slices weren't even, but oh well. If you can slice potatoes, you can make these.

I put some melted butter, parmesan, and a hint of garlic powder in my half sheet pan.

Then I stuck the potatoes on top, cut side down.

After that I just popped them in the oven! Super difficult, I know.

When they came out of the oven, the whole mess looked like this:

It was at this point that I realized I probably should have sprayed the pan with some Pam. Oops. I figured with the butter they should have been okay. They came off pretty easily though, I only had two really stuck parts. For being so easy, these were awesome. I would definitely make them again, more likely as a side for something. 4 stars for an easy side that isn't just mashed potatoes.

Dip for Doritos


I know what you're thinking. "Doritos don't need dip!" And you know what? You're right. But curiosity killed the cat, so I gave this recipe a go.

It was super easy, dump all the ingredients in a bowl and mix.



I apologize for the less than fabulous cell phone pictures, I'm not sure where my camera ended up in the move. Speaking of...do you like my new countertops?! Anyway, I let the dip hang out in the fridge for a few hours per the recipe.

I probably should have let it come up to room temperature before trying to dip the chips. I broke a few in an attempt to get a good looking one for a picture. But the dip itself isn't bad. It does actually work well with the Doritos, but I think I still prefer them plain. So I'll give this one 2 stars-it's not bad, but I don't feel like I have to have it with the chips.
